Southwest Mango Quinoa Salad

Quinoa Quinoa.. Either loved or disliked by many. 
This dish is so easy and flavorful. With the sweet juicy mango and lots of crunchy vegetables to balance some texture, I’m sure the haters won’t hate (at least as much 😉 )

I often get so tired of not having many lunch options and that are healthy too. I will make this at the beginning of the week and eat it for my lunches or serve it with some grilled protein for dinner. The more I prep my food, the easier I find myself happily digging into something healthy.

Southwest Mango Salad

This salad is fresh, flavorful, and delicious. It is healthy and fun for a quick side dish for dinner or a handy lunch option. It is gluten and dairy free.

Ingredients
  

  • 2 cups of dry quinoa
  • 2 cups of chicken broth or water
  • 1 cup of cherry tomatoes, halved
  • 1 mango, diced
  • 1 bell pepper, diced
  • 1 jalapeno, seeded(optional) and diced
  • ½ of a purple onion, diced
  • ¾ cup of cilantro, finley chopped
  • 1 15 oz. can of black beans, rinsed and drained

Dressing:

  • cup of olive oil
  • 3 Tbsp. of honey
  • 2 Tbsp. of apple cider vinegar
  • 1 lime, zested and juiced
  • 1-2 cloves of garlic, minced
  • 1 tsp. of cumin
  • 1 tsp. chili powder
  • pinch of cayenne + paprika
  • ¾ tsp. of salt, more if needed

Instructions
 

  • Bring broth and quinoa to boil and cover with a lid and simmer for 15-20 minutes until the quinoa soaks up the water and can easily be fluffed with a fork.
    (You can easily cook your quinoa in an Instant Pot too)
  • Once the quinoa is cooked, let it completely cool.
    Combine all the veggies and black beans together in a large bowl and set aside. 
  • In a measuring glass, combine the dressing together with a whisk or fork.
  • Drizzle the dressing over the quinoa and stir.
    (You may not need all of the dressing)
  • Taste and refrigerate before serving. 

Notes

Quinoa can sometimes taste bitter or even soapy when it is cooked. Try soaking it in water for 5-10 minutes and straining before starting the process of cooking it. 
Grilled chicken or blackened salmon is so lovely with this salad.
This quinoa can be kept well in an airtight container in the refrigerator for up to a week.
