Loaded Sweet Potato with a chipotle sour cream

I don’t know about you but sometimes in the winter I always need some fresh ideas for dinner and something that isn’t as heavy and rich. Do not misunderstand me.. I love delicious pasta dishes, pot roasts, and allll the mashed potatoes but other times I want to feel a bit like summer again too.

I can never get enough of sweet potato! And this loaded one is certainly delicious. I love to make this for dinner when I have extra pulled pork or chicken leftover. With the smokey chipotle sour cream, fresh cilantro, and candied jalapeños as toppings, this has become Clayton and I’s favorite! It was inspired by a loaded sweet potato I once ate in California. The restaurant is called “Sauced” and it was the best sweet potato I had eaten.. so naturally I wanted to come home and recreate it. That is the funnest part of eating at a restaurant in my opinion. 😉

Loaded Sweet Potato

This smokey sweet potato is loaded full of delicious and fresh ingredients. You can easily substitute things you have on hand or prefer instead. I love this recipe because it is a great dish to repurpose a yummy dish using leftover pulled pork or chicken.

Ingredients
  

  • 4 medium sweet potatoes or yams
  • 3 cups of pulled pork or pulled chicken
  • bbq sauce, optional
  • 1 cup of pepperjack or monterrey jack cheese
  • 1 16 oz. can of baked beans
  • 1 cup of fried bacon
  • fresh cilantro
  • candied or fresh sliced jalapeños
  • chopped green onion or pickled red onion
  • ¾ cup of sour cream
  • 1 tsp. of chipotle chili powder
  • ½ tsp. of smoked paprika
  • splash of liquid smoke

Instructions
 

  • Preheat the oven to 400°.
  • Wash potatoes and dry well.
    With a knife carefully cut down through the sweet potatoes lengthwise. (It does not have to be a deep cut) Next, cut across the line about 3-4 times to make short cuts.
    This will help in the baking process and when its time to load the potato.
  • On a baking sheet lined with parchment paper, drizzle the potatoes with olive oil and sprinkle with coarse or flaked salt if you wish.
    Bake for 45- 1 hour until you feel the potato is soft and you can push it in with your finger. (this all depends on how small or large your sweet potato is.. so keep a timer and check often)
    I usually bump up the temperature to 425° for an extra 15 minutes but you can keep it at 400 for a little longer.
  • On the last leg of baking time, warm up the pulled pork and prep the rest of the ingredients.
  • Once the sweet potatoes are finished, take a fork and fluff the inside.
    Top with all the good stuff and ENJOY!. 🙂
