Loaded Sweet Potato
Sweet potatoes and yam’s are a staple at our house. One of my favorite ways to prepare it is to roast it and then STUFF it. There are endless flavor options to choose from, but I always have these ingredients on hand for the most part.
Often when I have leftover pulled chicken or pork, I make this later on in the week for another dinner. It has sweetness, a touch of salt, freshness and texture from the corn and cilantro.
You simply bake your yam in the oven at high heat, stuff or top with bbq pulled pork, fresh corn salsa and dig that fork into it! Serve with chips to go with the corn salsa or a fresh side salad.
This meal is perfect if you are looking for a meal prep idea. The salsa will keep in an airtight container for several days (it’s even better the longer it has been made), and the sweet potatoes can be made ahead of time and reheated.
Loaded Sweet Potato
Ingredients
- 3 medium sweet potatoes or yams
- seasoning salt or coarse salt
- olive oil
- 4 ½ cups of pulled pork
- bbq sauce
- corn salsa
fresh corn salsa:
- 3 cups of frozen corn, thawed
- 1 jalapeño, minced
- ½ purple onion, diced
- ⅓ cup of fresh cilantro, chopped
- 1 can of black beans, drained and rinsed
- ½ cup of crumbled cojita or feta cheese, OPTIONAL
- 2-3 Tbsp. of lime juice
- ½ tsp. of salt
- ½ tsp. of chili powder
- ½ tsp. of ground cumin
- pinch of black pepper
Instructions
- Preheat your oven to 400'. Wash potatoes.With a large sharp knife, cut sweet potatoes lengthwise. Brush all sides with olive oil and sprinkle with salt. Place on a baking sheet and bake in oven for 25 minutes, then cover with foil and continue to bake another 10-15 minutes (depending on size of potato) The skin will start to wrinkle and you will be able to press down and it will feel soft.
- While the sweet potatoes are baking, get out a small bowl and combine your salsa, tasting after you are finished, If you want it spicier, add more chili powder or some red pepper flakes.
- Once your sweet potatoes are out of the oven and your salsa prepared, warm your pulled pork and lightly toss with any bbq sauce you have on hand. Start by plating your potato first, then your bbq pulled pork or chicken, and lastly your fresh corn salsa. You may serve with chips to go with the corn salsa or a fresh side salad.
