Chopped Salad Pizza

Chopped Salad Pizza

Often I will thumb through Pinterest when I need some fresh inspiration. I came across this recipe and wanted to try it IMMEDIATELY.

I used my tried and true pizza crust recipe that can be made so fast if you are in a hurry or it can wait and raise a little and be just as good! I recommend making the pizza dough at least an hour ahead of time if not longer, but many times I have made it quickly and used it straightway too.

yuuum. Let’s keep going.

One note I will add, the fresh herbs MAKE this salad, but this recipe is designed to do and add whatever you wish. That’s the beauty of cooking. 🙂 so feel free to omit, substitute or add.. I’m sure it’s going to be delicious.

I start by pre baking my crust for 2-3 minutes on very high heat in my oven. Add marinara sauce and some fresh or shredded mozzarella cheese and return to the oven until the cheese has melted so gloriously. Let pizza slightly cool as you prep your salad.

Chop your vegetables until your heart is content, add your greens, dress the salad so simply, and toss. Use tongs to top your pizza with as much or minimal the salad as you would like. Cut up and DEVOUR!! It’s so good.

This can be made for a fun appetizer or party food, easy lunch, or fun dinner, you choose!!!

Equipment

  • Pizza Stone or Baking Sheet
  • Parchment Paper

Ingredients

  • any pizza dough, link above for what i use
  • marinara sauce
  • shredded mozzarella or fresh mozzarella
  • spring mix (arugula included) or romaine lettuce, chopped
  • peppercini's or banana pepper rings, chopped
  • cherry tomatos or roma tomatoes, halved or diced
  • sliced salami, cubed
  • black or green olives, chopped
  • white or purple onion, diced
  • fresh basil and oregano, chopped
  • olive oil + vinegar
  • salt + pepper
  • red pepper flakes, optional

Instructions

  • Begin by mixing up your dough and letting it rest for 10 minutes or make it ahead of time to rise until you want to use it.
  • Preheat your oven to 450°. Place your pizza stone or a sheet pan you like to bake pizza on, while it is preheating to get it nice and hot.
  • Meanwhile, roll out your pizza dough really thin with a rolling pin and by stretching your dough. It can be round rectangle, square, mini, whtever you choose.
If you have a pizza peeler, adequately sprinkle cornmeal and place dough on the peeler and tranfer to the hot pizza stone or pan.
Another option is dusting parchment or baking paper with cornmeal, place dough and tranfer to the oven. (you can easily bake it with the pizza dough on the parchment paper)
  • Pre bake your pizza dough for 2-3 minutes. Remove and add marinara or pizza sauce and mozzarella cheese. Place bake into the oven until the cheese is melted and bubbly. (3-4 minutes) Let the pizza slightly cool when finished baking.
  • While pizza is baking its second round chop your vegetables and dress the salad with the oil, vinegar, salt, and pepper. Use tong and place right on top of the pizza and cut with a pizza cutter or a sharp knife.
Top with more cheese and red pepper flakes if desired.
  • Eat immediately and ENJOY!
