Sweet n Salty Caramel Brookies

think. cookie + brownie + caramel + sea salt + plenty of chocolate. THIS BROOKIE is not even an option to dislike. Goo-ey caramel in the center and flaked sea salt = PERFECTION!

A couple notes before you get started.

  1. The dough is super easy to make but there is a little bit of time (20 minutes) needed to chill the dough. The reason for that is so the cookies do not spread when baking. I usually chill the dough while I unwrap the rolos, preheat my oven, and change a diaper. *haha
  2. These cookies are meant to be eaten warm because the caramel will harden after cooled down too long, but no worries you can simply rewarm them in the microwave.

Ingredients
  

  • 4 large eggs
  • ½ cup of vegetable oil
  • 2 cups of granulated sugar
  • 1 cup of special dark hershey's cocoa powder
  • 2 cups of all purpose flour
  • 2 tsp. of baking powder
  • 2 tsp. of vanilla
  • ½ tsp. of salt
  • 28-29 rolo caramel candies
  • flaked or coarse salt
  • pretzels

Instructions
 

  • Beat the eggs well in a bowl or stand mixer. Add the vegetable oil, sugar, cocoa, and vanilla.; Combine well.
  • Add the dry ingredients and mix only to combine.
  • Chill dough in the refrigerator for 20 minutes while unwrapping the rolos and preheating the ovento 350°. With a cookie scoop, evenly scoop out the dough, release into your hands, and punch the middle with your thumb (making a well). Place a rolo candy into the well, pinch the dough back together and roll to a perfect shape. Place on greased parchment paper lined baking sheet. Repeat.
  • Bake at 350° for 10-11 minutes but no longer.
  • Remove from the oven and press broken pretzel bites, peices of chocolate, and sprinkle plenty of flaked or coarse salt while they are still warm.
  • Let them slightly cool but they are best EATEN WARM. (you can always warm them back up in the microwave too)

Notes

These cookies can be made ahead of time and frozen in dough balls or refrigerated until time to bake. Let them set out on the counter to room temp and then follow the same baking instructions.
